Garden Vegetable Baked Eggs

Eggs en Cocotte are my absolute favorite way to eat eggs. Put simply, Eggs en Cocotte are a French  dish of baked eggs. I love them because they can be customized based on what you have in your fridge…or garden! Sometimes I add a little bit of tomato sauce, fresh mozzarella and basil leaves to them, sometimes it’s bacon and caramelized onion…other times I like an assortment of fresh garden vegetables, chopped into small pieces so that they cook quickly.
