These Lime Possets are easy to make with only 3 ingredients – they are essentially a citrus custard made with cream, sugar, and limes!
A Posset is a simple pudding made by reducing cream and sugar, then thickening by adding acidic citrus once off the heat. As it chills it thickens into a firm, custard like consistency.
You can use limes or lemons, even grapefruit. Oranges can be used as well, but will need to have some lime or lemon added to up the acid.
If you don’t feel like scraping out limes, to serve this fun little dessert in, a pretty little glass dish works just as well!These poses are an excellent dessert to make ahead of time as they keep well in the fridge for several days.

Lime Posset
a three ingredient lime pudding that is creamy, tart, and extra decadent.
Ingredients
- 3 large limes
- 2 1/4 cup heavy cream
- 3/4 cup granulated sugar
- 1/3 cup lime juice freshly squeezed
- 1/2 tablespoon lime zest
Instructions
- Cut the limes in half lengthwise. Run the cut sides over a juicer and reserve juice to use in pudding.
- Scrape out the fibers in each lime half to leave a smooth shell. Set aside.
- Place the cream and sugar in a heavy bottomed sauce pan and bring to a boil, stirring until sugar is dissolved. Turn the heat down to a simmer and let cream gently cook down for five minutes, whisking occasionally.
- Remove from heat and whisk in the lime juice.
- Let sit for 5 minutes and whisk again. Mixture should have thickened significantly.
- Whisk in the lime zest.
- Divide the mixture between the prepared lime shells.
- Alternatively- divide the mixture between small dessert cups.
- Refrigerate for two hours, or until set. Enjoy chilled.
