Cucumber Coconut Lime Popsicles

As much as I like making ice cream, one of the things I love about popsicle making is the simplicity. Usually, all they involve is throwing a few ingredients in a bowl, mixing, pouring into molds and freezing.
I’ll admit, I am not one to avoid making an overly complicated popsicle. But these Cucumber Coconut lime Popsicles are super simple and easy to throw together.

Seriously, the hardest part about making these popsicles is straining the mixture through a fine mesh sieve. Once they’re frozen you’ve got an extremely refreshing, cool yet creamy treat.

Creamy coconut, tangy lime, and crisp cucumber make for a perfect heat-beating pop!

Serves: Makes 8 popsicles
Ingredients
  • 1 Can Coconut Milk(full-fat)
  • 1 Small Cucumber, peeled
  • Juice of 2 Limes
  • ⅓ cup Sugar
Instructions
  1. Place the lime juice and sugar in a small saucepan and heat on high, stirring, just until sugar is dissolved.
  2. Pour the lime syrup into a blender, along with the coconut milk and cucumber. Blend until smooth. Run the mixture through a fine mesh sieve and discard solids.
  3. Pour the liquid into popsicle molds and freeze for 1 hour. Insert popsicle sticks and freeze until solid, at least another 6-7 hours.

    Coconut milk from a can or beverage coconut milk?
