Summer is almost over. This means I go into a watermelon purchasing frenzy, trying to squeeze every last drop out of seasonal produce availability that I can. Unfortunately, when you get to the end of the summer, the crisp, crunchy, perfect watermelons seem to be in short supply and I am left on occasion with a watermelon that is a bit of a dud.
This is when I start whipping out ice cold watermelon aqua fresca almost daily. These dud watermelons aren’t so great for eating plain, but they are absolutely perfect for a refreshing, easy to make aqua fresca.
