Winter Pomegranate Swiss Salad
Serves: Serves 12-18
*This makes a large amount of salad, you may want to cut it in half if you are only serving 8 people or less.
  • 2 packages or bunches Spinach, washed
  • 2 heads Iceburg lettuce, chopped into bite-sized pieces
  • ¾ lb. Swiss Cheese, shredded
  • 1 C. Cottage Cheese
  • 1 Pomegranate, seeded
  • 1 lb. Bacon, cooked and crumbled
  • 1 C. Mushrooms, sliced
  • ½ large Red Onion, thinly sliced(optional)
  • 1 recipe Poppy Seed Dressing
  1. Place salad ingredients in a large bowl. Pour some of the dressing over the salad and toss all ingredients together until everything is well distributed.
  2. Add more dressing, if needed.
