Pumpkin Streusel Muffins

- 1½ cups pumpkin purée
- ½ cup avocado oil
- 1 cup brown sugar, packed
- 2 eggs
- 1 tablespoon vanilla
- 1½ cup kamut or all purpose flour
- 1 tablespoon pumpkin pie spice
- 2 teaspoons baking powder
- ½ teaspoon salt
- FOR THE STREUSEL:
- ½ cup kamut or all purpose flour
- ¼ cup white sugar
- ¼ cup brown sugar
- 1 teaspoon cinnamon
- ¼ teaspoon salt
- 3 tablespoons butter, cold
- Preheat the oven to 375°F.
- Line a muffin tin with cupcake liners.
- Place the pumpkin purée oil, brown sugar, eggs, and vanilla in a large mixing bowl and whisk together until smooth.
- In another bowl add the flour, pumpkin pie spice, baking powder, and salt. Whisk to combine.
- Add the dry ingredients to the wet ingredients and whisk together until a thick batter forms.
- Scoop the batter into the lined muffin tins, filling each well ¾ of the way full.
- For the streusel: In a small mixing bowl, add the flour, white sugar, brown sugar, Cinnamon, and salt, and stir together.
- Cut the cold butter into cubes and cut into the flour mixture with a pastry cutter until the butter pieces are the size of a small peas.
- Sprinkle 1 tablespoon of streusel topping over each filled muffin well.
- Bake in the preheated oven for 10-12 minutes, or until puffed and firm on top.
- Remove from oven and let cool slightly before enjoying. Store in an airtight container.
