Creamed Swiss Chard & Eggs

*Serve dish with a loaf of crusty bread.
Ingredients
  • 2 tablespoons Olive Oil
  • 2 bunches (about 12 stalks) Swiss Chard, sliced into ribbons
  • 1 small Red Onion, thinly sliced into rounds
  • 3 Garlic Cloves, thinly sliced
  • ½ teaspoon Sea Salt
  • ¼ teaspoon Freshly Ground Black Pepper
  • ¼ teaspoon Chili Flakes
  • 2 cups Heavy Cream
  • 8 large Eggs
Instructions
  1. Preheat the oven 375 degrees f. Add olive oil to a 12" frying pan and place over medium/high heat. Add the sliced swiss chard and onion and saute for 2-3 minutes, or until chard is wilted. Add the garlic, salt, pepper, and chili flakes and saute for 1 minute.
  2. Add the cream to the pan and bring to a boil. Reduce the heat to medium and let simmer for 4-5 minutes, or until cream has thickened slightly.
  3. Crack the eggs, one at a time, directly into the creamed chard.
  4. Carefully place in the center rack of the preheated oven and bake for 5-7 minutes, or until the eggs are cooked to your preference.
  5. Remove from oven and finish with sea salt, black pepper, chili flakes, and a drizzle of olive oil.
  6. Serve immediately along with a good crusty bread.
