Cinnamon Sugar Apple Fries + Coconut Custard
Serves: Serves 3-4
 
Ingredients
  • FOR THE APPLE FRIES:
  • 4 HoneyCrisp Apples, peeled
  • ½ tablespoon Coconut Oil, liquified
  • ¼ cup Raw Cane Sugar
  • 1 teaspoon Cinnamon
  • FOR THE COCONUT CUSTARD:
  • 1 Egg
  • 4 Egg Yolks
  • 2 tablespoons Raw Cane Sugar
  • ⅓ cup Coconut Milk(canned, full fat)
  • 1 teaspoon Vanilla
Instructions
  1. FOR THE APPLE FRIES:
  2. Slice the apples into medium/thin wedges(about 20 per apple).
  3. Place apple slices in a bowl and toss them with the coconut oil until coated.
  4. Turn on the air fryer and press the "fry" icon. Set the timer to twenty minutes.
  5. Place the apples in the rotisserie basket and shut the lid.
  6. Once the airfryer has been running for 3 minutes, carefully insert the rotisserie basket into the machine. Turn on the rotisserie feature so that the basket continually turns.
  7. Let cook for the remaining 17 minutes. Make the custard while the apples cook.
  8. Very carefully remove the rotisserie basket with the basket removal tool and using oven mitts, open the basket and shake the apple fries into a bowl.
  9. Sprinkle the cinnamon sugar over the apples and toss to coat.
  10. Dip in the coconut custard and enjoy!
  11. FOR THE COCONUT CUSTARD:
  12. In a small saucepan, whisk together the egg, egg yolks, sugar, and coconut milk. Cook over medium heat, whisking constantly, until the mixture just comes to a boil. Remove the pan from the heat and continue to whisk non-stop for another minute - this will keep the custard from curdling and let it cool a bit. Whisk in the vanilla.
  13. Pour the custard into a bowl and serve with the apple fries. Store in an airtight container in the fridge.
