Chocolate Blender Banana Bread {gluten, dairy, and refined sugar free}
Serves: 1 loaf of bread
 
Ingredients
  • 3 ripe Bananas, peeled
  • 3 large Eggs
  • ½ cup Coconut Oil, liquified
  • ⅓ cup Honey
  • 2 teaspoons Vanilla
  • 1 cup Brown Rice Flour
  • ¼ cup Teff Flour
  • ¼ cup Almond Flour
  • 2 tablespoons Tapioca Starch
  • ¼ cup Raw Cacao Powder
  • ¾ teaspoon Baking Soda
  • ½ teaspoon Sea Salt
Instructions
  1. Preheat the oven to 375 degrees. Grease a standard sized loaf pan.
  2. Place the bananas, eggs, oil, honey, and vanilla in a blender and process until smooth and creamy.
  3. In a mixing bowl, whisk together the flours, tapioca starch, cacao powder, baking soda, and salt. Add the dry ingredients to the blender and process until combined.
  4. Pour the batter into the prepared loaf pan, scraping out any batter that remains inside the blender with a rubber spatula.
  5. Place the pan in the preheated oven and bake for 50-55 minutes. Insert a toothpick into the center of the bread. If it comes out clean, the bread is done.
  6. Cool bread on a wire rack. Remove the bread from the loaf pan and slice!
  7. Store in an airtight container.
