Slow Cooker Pork Pozole (with ALL the toppings!)
Serves: serves 8
 
Ingredients
  • 3 lbs Boneless Pork Roast, cut into 4-inch pieces
  • 2 tablespoons Olive Oil
  • Salt and Pepper, to taste
  • 1 large Onion, chopped
  • 8 Garlic Cloves, crushed
  • 1 tablespoon Chili Powder
  • 1 teaspoon Smoked Paprika
  • 8 cups Chicken Broth
  • 1 can Hominy (white or yellow)
  • TO GARNISH:
  • Sour Cream
  • Lime Wedges
  • Sliced Radishes
  • Chopped Cilantro
  • Diced Red Onion
  • Diced Avocado
  • Salsa
Instructions
  1. Salt and pepper all sides of the pork.
  2. Heat the oil in a large pot. Add the pieces of pork and cook until browned on all sides. Set the pork in the bowl of a slow cooker. Add the onion, garlic, chili powder, and smoked paprika to the pot and saute for 4-5 minutes, or until the onion is soft. Add the chicken broth and bring just to a simmer. Remove from heat and pour over the pork in the slow cooker.
  3. Add the hominy to the slow cooker, cover, and cook on high for 4 hours or low for 6-8 hours.
  4. When pozole is finished cooking, place the pieces of pork in a bowl and lightly shred. Add back in to the soup and check seasonings, adding more salt, if desired.
  5. Serve pozole in bowls garnished with desired toppings.
