Cranberry Orange Ginger Salsa & Whipped Goats Cheese
Serves: serves 8
 
Ingredients
  • 12 ounces Fresh Cranberries (sift through berries and remove any that are soft or leaking juice)
  • 1 Jalapeno, seeds removed and chopped
  • ¼ Red Onion, minced
  • ½ bunch Cilantro, stems removed
  • zest of 1 orange
  • ¼ teaspoon Grated Ginger (use fresh)
  • ½ cup Honey (or ½ honey & ½ maple syrup)
  • juice of ½ Lemon
  • 1 teaspoon Cinnamon
  • ¼ teaspoon Cumin
  • 1 large pinch Ground Cloves
  • 8 ounces Cream Cheese
  • 4 ounces Goats Cheese
Instructions
  1. Place the cranberries, jalapeno, red onion, and cilantro in a food processor. Process just until the cranberries are chopped. Scrape the mixture into a mixing bowl.
  2. Add the orange zest, ginger, honey, lemon, cinnamon, cumin, and cloves to the mixture and stir until everything is well mixed. You can be done with the salsa at this point. OR, if your like me, you can let it sit for 30 minutes for all the juices to release, strain them and boil them down in a saute pan until they are thick and syrupy. Let the syrup cool and pour it back over the salsa. This will intensify the flavor and sweetness of the salsa and make it not so liquid-y.
  3. Place the goats cheese and cream cheese in a stand mixer and beat together until smooth and creamy. Scrape the cheese mixture onto a plate, smoothing across the plate at about a ½" thickness. Spoon the cranberry salsa over the cheese.
  4. Serve chilled, spread on crackers.
