Immune-Boosting Peach Iced Tea
Serves: ½ gallon
  • 3 tablespoons Dried Echinacea (or 9 Echinacea tea bags)
  • 8 cups Boiling Hot Water
  • ¼-1/3 cup Raw Honey
  • Juice of 1 Lemon
  • 4 Peaches, pits removed, juiced and run through a fine mesh sieve (pureeing in a blender and running through a fine mesh sieve will also work)
  • Ice
  1. Place the tea leaves in a half gallon mason jar and pour the boiling water over them. Cover and let steep for several hours, or until the tea is cool. Pour the tea through a strainer into a pitcher and discard leaves.
  2. Stir the honey into the tea, adding more or less to taste. Add the lemon juice and peach puree/juice.
  3. Serve over ice.
