Soft & Chewy Chocolate Chip Cookies {Gluten & Dairy Free}
Serves: 25-30 Cookies

  1. Preheat oven to 325 degrees. Line 2 baking sheets with non-stick mats or parchment paper.
  2. In a mixing bowl, combine the almond flour, coconut flour, cornstarch, baking powder, baking soda, and salt.
  3. In the bowl of a stand mixer, cream together the coconut oil and coconut palm sugar until smooth.
  4. Add in the honey and vanilla and beat until smooth.
  5. Add the eggs, one at a time, beating well after each addition. Scrape down the sides of the bowl.
  6. Add in the full amount of the dry ingredients and mix in until well combined.
  7. Add the chocolate chips and mix in well.
  8. Let dough sit for 10 minutes.
  9. Place 2 T. scoops of dough on prepared baking sheets, 2" apart.
  10. Bake in preheated oven for 10-12 minutes.
  11. Remove from oven and let cool on baking sheet.
  12. store in an airtight container.
