I love a gin sour.

Something about that silky egg white foam gets me every time.

This spiced lemon version  sort of brings together the comfort of winter spices and the fresh lemon tartness of summer.

Spiced Vanilla Bean Gin Sour

Simple syrups are so easy to make and a fun way to add a little personality to your cocktails.

The simply syrup used to make this cocktail consists of lemon juice, sugar, cinnamon, cardamom, nutmeg, and vanilla bean. Fresh, whole spices are best, but you can get away with using ground versions and bottled vanilla if that’s what you have available. The syrup will store in the fridge for several weeks, so use it for anything you can think of, not just cocktails!

For those who are averse to using raw egg whites in a cocktail, it may be interesting to know that shaking the egg white with fresh lemon juice “cooks” the egg white, in theory, because of the acid in the lemon juice. But if you are concerned, you can look for pasteurized eggs to use.

And for those who like their cocktails a little sweeter, upping the simple syrup to 3/4 oz may be more to your liking.

Ingredients
  • FOR THE SPICED LEMON VANILLA SIMPLE SYRUP:
  • 1 cup Sugar
  • 1 cup Water
  • 3 Cinnamon sticks
  • 6 Cardamom Pods, lightly crushed(or ½ teaspoon ground)
  • ½ teaspoon Nutmeg(freshly grated, if possible)
  • 1 Vanilla Bean
  • Juice of 2 Lemons
  • FOR THE GIN SOUR:
  • Juice of ½ Lemon
  • 1 Egg White
  • ½ ounce Spiced Lemon Vanilla Simple Syrup
  • 2 ounces Gin
  • Ice
  • Whole Cardamom Pod, to garnish
Instructions
  1. FOR THE SPICED LEMON VANILLA SIMPLE SYRUP:
  2. Place the sugar and water in a medium-sized saucepan and stir. Place the cinnamon sticks, cardamom pods, nutmeg, vanilla bean(slit the bean, scrape the seeds into the pan, and add the pod as well), and lemon juice to the pan and give another stir. Bring to a boil over medium/high heat, stirring occasionally. Reduce heat to medium and let simmer gently for 8 minutes. Remove from heat and cover. Let sit for 1 hour.
  3. Pour syrup through a fine mesh strainer, discarding solids.
  4. Store in an airtight container in the refrigerator.
  5. TO MAKE THE GIN SOUR:
  6. Place the lemon juice, egg white, simple syrup, and gin in a cocktail shaker and shake for 20 seconds.
  7. Add the ice to the shaker and shake again until chilled.
  8. Strain into a coupe glass and garnish with a cardamom pod or lemon twist.

      Thank you! Hope you try it. Spiced lemon is just referring to the flavors in the simple syrup…cinnamon, cardamom, nutmeg =)

    Where is the recipe ?????? I love your pictures but< there is no mention of amounts for that delectable simple syrup! Is there a page i should go to to get the recipe with ingredient amounts? Please advise , this is my first time on your web site , I just adore the bits on Instagram.

    This actually looks insanely good!! I want to try this sometime because your photos look so good. The only problem is that I don’t really like gin! Maybe this will change my mind 🙂
