For the last few posts I’m sure most or all of you just assumed that I was pumping out the usual run of the mill, stand on their own recipes.

Well, today I come clean.

I’ve been preparing you for this.

I didn’t want to overwhelm you with the awesomeness you see pictured, so I did it slowly, over the course of several days.

One day, hand pies.

The next, a salted caramel ice cream.

And now that you are ready, I present to you:

It’s a bit of a mouthful, in more than one way.

You actually may need to detach your jaw so get a good bite of these bad boys.

That would be worth it, I assure you.

Flaky pie crust holding tart blackberry filling muddled with creamy Mascarpone, sandwiching a mound of homemade salted caramel ice cream amounts to what I consider the end to all ice cream sandwiches. The queen of frozen hand-held treats.

It’s a combo you don’t want to miss.

This recipe makes about 6 or 7 pie ice cream sandwiches. They are very large, however, so you could probably get away with cutting them in half and sharing.

Unless you’re my Mom, in which case you will hide your pie in the freezer, slowly cutting off a wedge at a time, hoping no one sees your little frozen treat stash and steals your happiness from you.

*wink wink, Mom.

KITCHEN HACK OF THE DAY:

I mentioned this in my last pie ice cream sandwich post, but it is necessary here as well:

To get perfectly even, stuffed ice cream sandwiches, line a wide, somewhat shallow measuring cup or ramekin with plastic wrap, pressing it into the sides. Any shallow, small cylindrical container will work(at about a 1 C. capacity) as long as it had straight sides. Spoon the ice cream into the plastic wrap lined container and press it down firmly, until the container is full. Smooth out the top with your spoon. Invert the container into your palm. The ice cream should drop right out(if you want to do this ahead, you can. Just put the plastic wrapped ice cream discs in the freezer until ready to stuff the pies). Place one pie, bottom side down, on top of the ice cream disc(on the side not covered in plastic). Peel the plastic wrap off of the ice cream and top the bottom of the ice cream with another pie.

Ingredients
  • 1 Recipe Blackberry Mascarpone Hand Pies
  • 1 Recipe Salted Caramel Ice Cream
Instructions
  1. Chill pies in the refrigerator.
  2. Stuff chilled pies with scoops of salted caramel ice cream and serve immediately.
