When I think about it, I really am not the type to pick up recipes from other people.
Mostly, I think, because I love creating my own thing and I am not a big recipe follower. I mean, when I started this blog 4 years ago I really had to force myself to pay attention to the amounts of ingredients I added to things so that they could be repeated by others.
But this salad is the exception.
My Aunt Lisa has been bringing this to family functions for as long as I can remember. It’s one of those salads that you try to get ahead of the little kids in line for, so you can get at least a taste before it’s quickly devoured by one of your 60 cousins(just me, huh?).
After a huge thanksgiving dinner full of multiple amazing dishes, this is the one thing I always want more of, and that, on the rare occasion that there is a little left at the end of dinner, I find myself eating out of a paper cup, sprawled out on a couch somewhere trying to make more room in my tummy.
It’s just that good.
Spinach mixed with iceburg, Swiss cheese, cottage cheese, bacon, mushrooms, pomegranate seeds, and of course, my
favorite poppy seed dressing. This is my favorite salad to date.

- 2 packages or bunches Spinach, washed
- 2 heads Iceburg lettuce, chopped into bite-sized pieces
- ¾ lb. Swiss Cheese, shredded
- 1 C. Cottage Cheese
- 1 Pomegranate, seeded
- 1 lb. Bacon, cooked and crumbled
- 1 C. Mushrooms, sliced
- ½ large Red Onion, thinly sliced(optional)
- 1 recipe Poppy Seed Dressing
- Place salad ingredients in a large bowl. Pour some of the dressing over the salad and toss all ingredients together until everything is well distributed.
- Add more dressing, if needed.
